While this recipe evokes a sense of nostalgia, it’s not your typical, run-of-the-mill crepe recipe. The secret to these extraordinarily tender and easy-to-work-with crepes lies in the addition of kefir to the batter. Kefir lends a subtle tang and creates a wonderfully smooth texture that allows the crepes to fold beautifully without tearing. This unique ingredient elevates these crepes to a whole new level of deliciousness. A big thank you to my friends at Lifeway Kefir for sponsoring this recipe!

Recipe Ingredients
Here’s what you’ll need to make these mouthwatering crepes:

Ingredient Notes:
- Kefir: This key ingredient is what makes these crepes so remarkably tender and easy to handle. Lifeway’s plain lowfat kefir is my go-to choice for its consistent quality and taste.
- Melted Butter: Adding melted butter directly to the batter enhances the flavor and creates a delightfully tender crepe. Ensure the butter has cooled slightly before adding it to prevent cooking the eggs.
- Nutella: Spread Nutella over the crepes while they’re still slightly warm to achieve that irresistible melty goodness!
- Fresh Strawberries: Opt for ripe, juicy strawberries for the best flavor. Slice them thinly for even distribution in the crepes.
See recipe card below for a full list of ingredients and measurements.
Substitutions & Variations
- No Kefir? Substitute with an equal amount of 2% or whole milk. Avoid using skim milk, as the fat content is essential for achieving the desired tenderness and flavor in the crepes.
- Filling Freedom: Get creative with your fillings! Explore a wide array of options, including fresh fruit, farmer cheese, deli meat, and more. Whether you’re craving sweet or savory, the possibilities are endless!
- Extra Sweetness: Elevate your crepes with a drizzle of peanut butter or cookie butter alongside the Nutella for an extra indulgent treat! If you share my love for chocolate hazelnut spread, my swirled banana Nutella muffins are another must-try.
- Elegant Touch: Dust the finished crepes with powdered sugar for an even more elegant and dessert-like presentation.
- Add a dollop of whipped cream: A little whipped cream will add flavor and appeal to your dish.
- Sprinkle of chopped nuts: Add a variety of nuts on top of your crepe for flavor and texture.

How to Make Strawberry Nutella Crepes

Step 1: Combine all crepe ingredients in a food processor or blender. Pulse until smooth. Cover and refrigerate for at least 30 minutes.

Step 2: While the batter chills, slice the strawberries into thin, even slices.

Step 3: For each crepe, pour slightly less than ¼ cup of batter onto a greased, medium-low heat non-stick skillet.

Step 4: Quickly swirl the batter around the pan to ensure it covers the entire bottom surface. Cook until the crepe turns a light tan color (approximately 45-90 seconds), then flip and cook the other side.

Step 5: Transfer the cooked crepe to a plate. Spread a thin, even layer of Nutella over half of the crepe, and then arrange a single layer of strawberry slices on top.

Step 6: Fold the crepe in half, and then fold it in half again to form a quarter. Repeat steps 3-6 with the remaining batter until all crepes are made and filled.
Kayla’s Top Tips for Perfect Crepes
- Don’t Skip the Chill Time: Chill the batter for the full 30 minutes (or longer!). Resting the batter allows the flour to fully hydrate, resulting in smooth, tender crepes instead of thick, rubbery ones.
- Low and Slow: Maintain a low to medium heat setting on your stovetop. Crepes cook quickly, and if the pan is too hot, they’ll brown before you have a chance to swirl the batter evenly.
- The First Crepe is a Tester: Just like with pancakes, consider your first crepe a test run! It might not be the prettiest, but it’s still perfectly edible. Use it to fine-tune your heat and swirling technique. By crepe number two or three, you’ll be a pro!
- Gentle Flipping: Use a non-metal spatula for flipping. A stiff metal spatula can tear delicate crepes. Slide a thin, flexible spatula under the edge and flip quickly and carefully. If you’re feeling hesitant, you can even use your fingers to help guide it, but be cautious not to burn yourself! These crepes are quite forgiving, so don’t be afraid to experiment.
- Warm Nutella is Best: Spread the Nutella while the crepes are still warm. It will melt slightly, making it easier to spread and creating an extra gooey and delicious experience! If the crepes have cooled down, simply pop them in the microwave for a few seconds before adding the fillings.
- Use a light hand when swirling: Be careful to spread the batter out without making it too thin. The right thickness will help you achieve golden, moist crepes.
Common Questions About Making Crepes
You can find Lifeway Kefir in many grocery stores in the refrigerated dairy aisle, or on lifewaykefir.com/where-to-buy!
This usually indicates that the pan is too hot or the crepe hasn’t cooked long enough on the first side. Wait until the edges start to pull away from the pan before attempting to flip. My fluffy kefir pancakes use the same patience-is-key approach!
Absolutely! The batter can be made and stored in the refrigerator for up to 24 hours. Give it a good stir before using, as it may thicken slightly during refrigeration. This is a fantastic way to prepare the night before for a weekend brunch!
A blender works perfectly well too! You can also whisk the batter by hand in a bowl, but be sure to whisk it thoroughly to eliminate any lumps.
I use an 8-inch nonstick skillet, but you can certainly use a different size. Just keep in mind that a larger or smaller pan will affect the size and number of crepes you yield.
